Mediterranean vegetables par excellence, courgettes and aubergines are harvested at a very young age. If aubergines were harvested when fully ripe, they would be much more bitter ; courgettes would grow to become marrows. Sweet peppers are eaten at several stages of their growth. At the early stage they are green ; when ripe, they have a sweeter taste and a red colour. Depending on the varieties, they can even be yellow or orangey. Priméale peppers are longer in shape and have a very flavoursome taste.
